Community catering pilot project: Development of a regional value chain for the pre-processing of organic vegetables by inclusion companies

Abstract

The aim of the project is to set up a model of a regional organic value-added chain from the production to the use of regionally produced vegetables in communal catering. Due to the possibility of privileging social enterprises (inclusive enterprises, recognized workshops for people with disabilities) in the public tender for the delivery of canteens, an inclusive enterprise is to be developed as a model processing company and set up by project partners in the last project year in the eco-model region Lahn-Dill-Gießen, State of Hesse . This requires the development of a business plan, which at the end is also transferrable to other regions.
