Determine and optimize the carcass fat quality of organic pigs

Abstract

In organic pig production, it is difficult to stay within the fat score or PUFAs limits that are determined by the buyers due to several conditions. The findings of the study “Sustainable protection of fat quality in fattening pigs” (Scheeder and Müller, 2014) show that the expected and aspired 100% organic feeding concept will increase problems. Bio Suisse discussed the challanges  with representatives of the industry, Bio Suisse and the participants agreed that further trials on organic farms are needed: There need to be more broad-based results to see the effects of a 100% organic feeding concept on PUFAs concentration. Additionally, research is needed to find out if the oxidation stability of the meat can be improved by using food additives with antioxidant properties.
