Abstract

The availability of organic certified buffalo mozzarella is limited. Presently only swiss made organic buffalo mozzarella is available. The swiss retailer Coop wishes to complement its product-range with Bio Suisse certified italian "Mozzarella di buffala biologica DOP".

Sourcing Bio Suisse certified buffalo-mozzarella in Italy is challenging. Bio Suisse standards on animal husbandry and animal feed are particularly strict.

Considering the expected challenges, in the first year of the project the feasibility of sourcing italian buffalo mozzarella in Bio Suisse quality will be assessed. If the outcome of the feasibility study is positive, the sourcing-project will be fully implemented.
